Cooking with Cannabis has become this sensational thing nowadays with all the infusions and restaurant-like quality recipes that are not only delicious but is also an excellent celebratory meal! Plus it brings you the bottom line with weed!
As Canadians, we enjoy certain foods that are innate to this country and why not make a full meal out of it! Today we will be showing you a spread of infused food that you can prepare for today’s feast!
So, what are we waiting for? Let’s get the pot’s boiling and the boys baking!
1.) Weed Cheese Recipe
Ingredients
- 1 Cup Cannabis Milk (See our Cannabis Milk recipe)
- 3 Cups Raw Milk
- 1 Cup Cultured Buttermilk
- 2 tbsp Fine Sea Salt
- 2 tsp Lemon juice
Things you’ll need
- Stock pot
- Kitchen Thermometer
- Wooden spoon
- Colander
- Cheesecloth
- Plastic basin
- Cheese Press (or any improvised versions)
How to make Weed Cheese
1.) Make Cannabis Milk (See our Cannabis Milk Recipe)
2.) In a stock pot pour both Cannabis and Raw Milk and place on the stove over medium heat and allow it to reach and stay exactly at 79-80 degrees F and check by using the thermometer.
3.) Add Buttermilk and Lemon juice and remove mixture from the heat.
4.) Gently stir the milk mixture until you will notice it to curdle and separate (Add another tsp of lemon juice if the mixture is not forming curds). Set aside for around 10-12 mins.
5.) Line your colander with cheesecloth (4 layers) and place over the plastic basin. Ladle cheese curds onto the cheesecloth and allow it to drip for 5-10 mins.
6.) Get the corners of the cheesecloth and tie them together with a string to seal.
7.) Tie the cheesecloth with the curds inside on the wooden spoon and hang it inside your empty stock pot (make sure to leave some space at the bottom for the skim to drip). Set this aside for another half an hour. (At this point you can use a cheese press if you have one)
8.) Remove this from the wooden spoon and open the cheesecloth. Pour the Weed Cheese curds in a bowl and sprinkle your fine sea salt evenly on top. Mix the curds to incorporate it well.
9.) Transfer Weed Cheese curds into your preferred serving bowl and cover with some cling film or plastic wrap and refrigerate for about 12-24 hours. Viola! (Enjoy your own homemade Weed Cheese by spreading on crackers or bread!)
2.) Weed Burger Recipe
Ingredients
- 1/4 tbsp Cannabis Buds (Dried)
- 1 lb Ground Meat (beef, lamb or turkey)
- 3 pcs thick-cut bacon
- 2 tbsp Butter (Unsalted)
- 1/2 Medium Onion
- 4 Cheese Slices (your preferred kind)
How to make Weed Burger
1.) Decarb your Buds. Use a tray and line this with parchment. Spread the buds on the tray. Place in an oven for around half an hour to an hour at 240 degrees F. Mix the buds around every 10 mins to distribute the heat evenly.
2.) Remove from the oven and mix in with the butter, cover and put back in the oven and set at 250 degrees F for 25 mins. Make sure to keep the heat under control to ensure not to vaporize the cannabinoids.
3.) Using a strainer remove cannabis and set aside to cool down.
Assemble Burger
4.) Cut onions in to 2 inch slices
5.) Divide meat into 4 equal parts and shape into balls.
6.) Place the 1 burger on 2 individual sheets of foil around 10 inch square each. Put onion slices on the bottom and add patty on top.
7.) Smear half of the butter on each patty and add a slice of cheese on top. Make sure to leave about half an inch space on the edge.
8.) Stack another patty on top of each and make sure to seal the edges using the spaces left earlier.
9.) Wrap each patty with bacon slices and ensure to keep the shape and seal intact. Now using foil wrap each patty and seal edges tight.
10.) Place in the oven at 325 degrees F for about 20 min. Remove from the oven and open the top of the foil pack. Leave them in foil with the top open.
11.) Place back in the oven and increase heat to 425 degrees F. Cook until the batty turns brown or as desired.
12.) Take out from the oven and allow to rest for a couple of minutes. Assemble as desired. Top with cheese, caramelized onions, fresh onions, lettuce, slice of tomato and viola! Enjoy your own Weed Burger creation! Improvise toppings as far as your imagination brings!
3.) Cannabis Sea Bass Recipe
Ingredients
- 1 Whole Sea Bass (Chilean if available)
- 1 – 2 Pieces Lemon
- 2 – 3 tbsp Cannabutter or Cannabis-Infused Truffle Oil if available
- Sofrito (red & green bell peppers, tomatoes, onions, garlic, parsley, cilantro)
- Thyme
- Salt
- Pepper
How to make Cannabis Sea Bass
1.) Prepare the Sofrito by adding all the ingredients into a food processor and blend until smooth.
2.) Prepare your Sea Bass Fillets and cut shallow slits on the meat. Place on a baking tray.
3.) Pour enough Sofrito on the Sea Bass and spread until the fish is coated to marinate.
4.) Add pepper to taste based on your preference.
5.) Slice lemons thinly and add slices on top of the Sea Bass creating a layer.
6.) Add Thyme to taste based on your preference.
7.) Add a tablespoon of Cannabutter on top of each of the Sea Bass Fillets.
8.) Add Salt to taste.
9.) Using an aluminum foil, Cover the tray and seal the edges tight.
10.) Preheat the oven at 450 degrees F for 5 mins and bake Cannabis Sea Bass for 15 mins or until fragrant and the fish tarts to look flakey.
11.) Remove from the oven and set aside to rest for a couple of minutes. Remove foil cover and serve. Enjoy!
4.) Chocolate Cannabis Ice Cream Recipe
Ingredients
- 2 tbsp Cannabis Oil (See our Cannabis Oil Recipe)
- 3/4 Cup Sugar
- 1 Cup Whole Milk
- 2 Cups Heavy Cream
- 1/8 Cup Semi-Sweet Chocolate (Chopped)
- 2 tbsp Cocoa Powder (Unsweetened)
- 1 tsp Vanilla Extract (Vanilla bean is better)
- 3 Egg Yolks
- 1/4 tsp Salt
Things you’ll need
- Ice cream maker
- Saucepan
- Wooden Spoon
- Whisk
- Strainer
- Cheesecloth
- Mixing bowl
- Plastic container (for storing)
How to make Chocolate Cannabis Ice Cream
1.) In a saucepan combine Cannabis Oil, Milk, Sugar, Cocoa Powder and Salt and put over medium heat. Stir constantly until everything has incorporated well.
2.) Line your strainer with cheesecloth and pour the mixture through to filter.
3.) Pour mixture back to the same saucepan and bring back to a gentle simmer at low heat.
4.) In the small mixing bowl put 3 egg yolks and beat lightly using a whisk. Add a small amount of the hot cannabis ice cream mixture into the eggs while whisking continuously to ensure the egg does not cook into the hot liquid.
5.) Return the Egg mixture back into the batch and keep whisking slowly until the mixture thickens. (Ensure not to boil the mixture)
6.) Remove from heat and add in the chopped semi-sweet chocolate and still stir continuously until the chocolate melts and incorporates totally with the mixture.
7.) Pour mixture back into the mixing bowl and refrigerate for a couple of hours while stir mixture occasionally.
8.) Once the Chocolate cannabis ice cream mixture has cooled down mix in the heavy cream and vanilla extract and stir.
9.) Slowly pour the mixture into the ice cream maker and wait for the finish product to be ready depending on the machine specifications. Put the finished product in the plastic container for storing and place inside the freezer! Viola! You have your own home-made ice cream infused with Cannabis. 5.) Maple Syrup Weed Candy Recipe
Ingredients
- 2 cups Maple Syrup
- 4 grams Marijuana Buds
Thing you’ll need
- Grinder
- Oven
- Double-boiler
- Saucepan
- Wooden Spoon
- Strainer & Cheesecloth
- Parchment paper
- Baking Pan
How to make Maple Syrup Weed Candy
1.) Decarb your Buds. Use a tray and line this with parchment. Spread the buds on the tray. Place in an oven for around half an hour to an hour at 240 degrees F. Mix the buds around every 10 mins to distribute the heat evenly.
2.) Grind the buds finely and mix this with the Maple Syrup in the double broiler. Put on the stove top and and set on low heat. Make sure not to let the Maple Syrup/Weed mixture boil too much as this will risk vaporizing the cannabinoids.
3.) Let the mixture simmer at low heat for about an hour. Stirring Occasionally.
4.) Line your strainer with cheesecloth and place on top of the saucepan. Pour the Cannabis infused maple syrup to filter and squeeze all the goodness out of it! (transferring to a saucepan will allow you to increase temperature to candy the mixture)
5.) Place the saucepan back on the stove over medium heat and allow the mixture to reach 240 to 250 degrees F. Once there remove from the stove and set aside to cool down at 175 degrees F for t 10 mins and stir mixture again for another 2 minutes.
6.) Pour the Weed infused Maple Syrup Candy mixture on a pan lined with parchment paper and let this set and harden for the next 30 mins to an hour.
7.) Once hardened], smash the candy using the back of the wooden spoon to desired size and viola you now have your own Weed infused Maple Syrup Candy! Enjoy!
6.) Canna Banana Bread Recipe
Ingredients
- 1/2 Cup Infused coconut oil (See our cannabis oil recipe)
- 1/2 Cup Maple Syrup
- 2 Flax Eggs (See how to prepare flax eggs)
- 1 Cup Mashed extra ripe bananas
- 1/4 Cup Almond Milk
- 1 tsp Baking Soda
- 1/2 tsp cinnamon (ground)
- 1 tsp Vanilla Extract
- 1 3/4 Whole wheat flour
- 1/2 tsp Salt
- 1/2 Cup Nuts (Optional)
Thing you’ll need
- Bowl
- Measuring Cups
- Spatula
- Loaf Pan
- Wire rack
How to Make Canna Banana Bread
1.) Preheat the oven to 325 degrees Fahrenheit.
2.) Prepare flax eggs and set aside.
3.) In a bowl add in the Cannabis infused coconut oil and maple syrup.
4.) Once flax eggs start to become viscous or like jelly add this into the bowl and stir thoroughly.
5.) Pour in mashed bananas and milk and mix until well incorporated.
6.) Add in the baking soda, cinnamon, salt and vanilla. Again stir until incorporated well.
7.) Add in the wheat flour and mix thoroughly.
8.) Stir in the nuts if you prefer to add this. Then pour into the greased loaf pan.
9.) Bake 55-60 minutes or until a toothpick comes out clean when piercing the Canna banana bread.
10.) Let theCannabis infused banana bread cool in the loaf pan for about 10-15 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing. Viola! You now have your homemade Cannabis Banana Bread! Enjoy!
7.) Weed wine | Cannabis Infused Wine Recipe
Ingredients
- 4 Grams Marijuana Buds
- 1 Bottle of preferred Wine
Thing you’ll need
- Cheesecloth or a Pantyhose
- Whiskey Glass
How to Make Weed Wine
1.) Decarb your Buds. Use a tray and line this with parchment. Spread the buds on the tray. Place in an oven for around half an hour to an hour at 240 degrees F. Mix the buds around every 10 mins to distribute the heat evenly.
2.) Grind the Marijuana buds finely.
3.) Line the whiskey glass with cheesecloth or a pantyhose. This is to make it easier to put in the ground up weed inside when making a pouch.
4.) Pour in the ground up cannabis in the whiskey glass and tie up the top of the cheesecloth or panthose to create a small Cannabis pouch.
5.) Open the wine bottle. Insert the Cannabis pouch and make sure you leave a part of the cloth to hold it on top of the bottle.
6.) Insert the cork back into the bottle and let the excess cloth stick out to hold it in place.
7.) Allow the to infused wine -cannabis for at least 24 hours. The longer you let this stay in the better it becomes. Make sure to turn the bottle every 4 hours to allow the Cannabis infused wine to circulate inside.
8.) Remove the pouch from the bottle of wine infused with cannabis and squeeze as much of the goodness out from it. Viola! Refrigerate to chill and serve this weed wine on your next dinner get together! Enjoy!
